Clean equipment: Try to keep your equipment clean (wash after each use). Coffee beans leave oil behind that could change the taste of your coffee. The right grindr: Using the right grind is one of the most important element of espresso art. Your espresso bean should be ground very finely. Rememeber, the forced steam has to travel through the ground coffee. Very fine ground can help the steam to absorb the flavor of the coffee. Use cold, fresh, and clear water: The quality of your brew is heavily dependent upon the quality of the water that you use. You can use fresh tap water. If you're not happy with your tap water's flavor or color, you should consider filtered or bottled water. Tamp your doses accordingly: Try to tamp your grinds flat with 25-35lbs. of pressure, rotating the tamper to ensure a level surface for even distribution of water. Timing your brewing : 2 oz of coffee should be brewed in 25 seconds for a double shot of espresso. The espresso will taste a bit bitter if you go over 30 seconds.
